Ingredients (Serves 4)

  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 large onions, sliced
  • 3 cloves garlic, sliced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 400g canned butter beans, drained and rinsed
  • 28g chicken stock
  • 2 tbsp Greek-style yogurt, plus extra to serve (optional)
  • 300g shredded roasted chicken thighs (or leftover roast chicken)
  • Fresh coriander leaves (optional, for garnish)
  • rice or flatbreads, to serve (optional)

Instructions

  • Heat the olive oil and butter in a large frying pan over medium-high heat. Add the sliced onions with a pinch of salt and cook for about 5 minutes. Then, add the garlic and continue frying, stirring frequently, until the mixture turns a deep golden brown (about 25-30 minutes). This caramelization is key to unlocking the rich depth of flavor in this dish.
  • Scoop out a portion of the caramelized onion mixture and set it aside for garnish. Stir the turmeric and cumin into the pan, allowing them to bloom for a minute. Add the butter beans and mix well.
  • Dissolve the chicken stock pot in 300ml of just-boiled water and pour it into the pan. Stir to combine and let the mixture simmer for about 5 minutes to allow the flavors to meld.
  • Stir in the Greek yogurt and shredded chicken. Heat through for about 2 minutes until everything is well combined and piping hot. Taste and adjust seasoning if needed.
  • Garnish with the reserved caramelized onions and garlic. Serve with a dollop of extra yogurt, fresh coriander leaves, and your choice of basmati rice or flatbreads for a complete meal.
