Pastificio Del Colle - Chiocciole Naif Pasta (500g)

At Pastificio del Colle, pasta is crafted with traditional, artisanal methods, using only premium durum wheat semolina. The dough is either hand-kneaded or pressed through bronze dies that give the pasta a rough texture, ideal for holding sauces. Depending on the shape, natural coloured powders are added for variety.

After shaping, either by bronze dies or a delicate hand-molding process for multicoloured pasta, the pasta undergoes slow drying at a low temperature of around 38°C. This gentle method preserves the flavour and nutritional qualities of the semolina. Once dried to a humidity level of 12.5%, the pasta stabilizes and is then packaged—hand-packed for artisanal shapes and machine-packed for the rest, always bearing the Pastificio del Colle seal.

Cooking time : approximately 7 to 10 min.

Ingredients: Durum Wheat, water with the addition of paprika if orange, turmeric if yellow, spinaches if green, beetroot if violet. This product contains gluten and may contain traces of shellfish, soy and mustard.
