  • 200g Waitrose Sable Seedless Grapes, halved
  • 2 shallots, finely chopped
  • 2 tbsp red wine vinegar
  • 2 tsp clear honey
  • 2 x 400g cans lentils, drained and rinsed
  • 150g Greek feta, crumbled (strength 3)

Step 1: Roast the Carrots

After the initial 15 minutes, remove the carrot tin from the oven, give them a quick stir, and then mix in the drained lentils. Return to the oven along with the grape mixture, placing both tins on the same shelf if possible, or the grape mixture slightly below. Roast for another 10 minutes.

Step 4: Assemble and Serve

Transfer the roasted carrots and lentils onto a serving platter. Spoon the warm, juicy grapes and their roasting juices over the top. Sprinkle generously with crumbled feta cheese and shredded mint leaves if using, and serve immediately for best flavor and texture.
