This thick and creamy Aubergine and Parmesan pesto is packed with flavour. Smokey aubergines and PDO Parmesan with a background of rich tomato create a rich and indulgent taste that keeps on going.

Usages:

  • As a topping for a bruschetta
  • Stuff inside a chicken breast, coat with breadcrumbs and roast
  • Add to the end of a slow cooked lamb dish
  • As a warm dressing for boiled green beans or warm chick peas and roasted tomatoes
  • As a layer of a lasagne, or added to the minced beef for extra richness
